Sautéed Plantain Leaf and Onions

Plantain leaf is an excellent herb for repairing leaky gut, but do you know how to cook with it?

We love to pair plantain leaf with onions and add it to meals. Here’s an easy recipe:

In a large pan add 2tsp of dried plantain leaf, 1/3 cup water, 1tsp oil, and 1 medium onion, thinly sliced. Sauté over medium heat until the onion is brown and the water has fully evaporated. Season with salt and pepper to taste.

We love to put these onions on avocado toast, as you can see, but they also make for a tasty addition to soups and sandwiches. They will keep in the fridge for several days, so you can double or triple the recipe and keep some on hand.
