Lavender-Infused Sugar Tutorial

Lavender-infused sugar is a simple way to add the flavour and scent of lavender to your daily routine. Made by combining dried lavender with granulated sugar, you can store this flavourful sugar long-term. We suggest making a big batch to keep on-hand and add to baking, beverages, and confections.

Ingredients:

  • 1 cup granulated sugar (organic cane sugar works especially well)
  • 2 tablespoons dried organic lavender flowers

Tools:

  • Clean, dry glass jar with a tight-fitting lid
  • Fine mesh strainer or sieve

Instructions:

  1. Add the sugar and lavender flowers to the glass jar. Seal tightly and gently shake to evenly distribute the flowers throughout the sugar.
  2. Store the jar in a cool, dark place for 3-4 weeks. Shake the jar every few days to help release the lavender’s aromatic compounds into the sugar.
  3. Using a the fine mesh strainer or sieve, strain out the lavender and discard it.
  4. Keep the finished lavender sugar in an airtight container. Properly stored, it will retain its fragrance for a long time.

How to Use Lavender Sugar

  • Sweeten tea, lemonade, or coffee
  • Use in shortbread, scones, or sugar cookies
  • Sprinkle over fruit, yogurt, or baked goods
  • Rim cocktail glasses for a subtle floral note
